what do people mean by "stock or modified"?

"Stock" guns are as they come from the factory... it generally means that they shoot an average of 280 fps and have no extra cells on their battery.

Modification you can make to AEGs include:

Replacing the stock spring with a higher resitiance spring to get more FPS

Replacing the stock plastic bushings with metal bushings or bearings to the gearbox for more efficient performance.

Adding extra batteries either in series for more voltage or in parallel for more battery life.
(more voltage means higher fire rate)

Replacing the stock plastic gearswith metal gear sets for better durability.

Replacing the stock motor with a faster/more powerful motor for higher rate of fire or to compensate for an extremely powerful spring upgrade.

No not really....most places couldn't care less how "modified" your gun is as long as you remain under their FPS limits for AEGs or Sniper rifles.
